Elaboration and tasting notes
Blend — Chardonnay, Macabeo, Xarel.lo, Peralada, Chardonnay, Pinot Noir are those used in appropriate ratios for each year maintain the same line of quality and ensure the consumer a high-end product elaborated traditional method champenoise.
Making and Ageing — Made an extreme selection of grapes. Gentle pressing in order to obtain the first must. The first fermentation takes place in stainless steel vats at a controlled temperature of 15º-18ºC for around 10 days. We have underground cellar which maintain the ideal temperature conditions for the second fermentation and ageing period in the bottle. The second fermentation process is less than 13 degrees Celsius, very slowly, approximately in three month, minimum 3 years of aging in close contact with the lees until you reach your optimal level of fragrance and getting a finesse and integrated sparkle.
Clarified — After ageing the bottle is inverted and moving eighths of round doing that the lees be deposited in the bottleneck.
Disgorgement — The next item is the extraction of lees leaving the sparkling completely clean. The dosage of expedition liqueur brings between 6-8 grams of sugar per liter (customer can choose depending his market), and a genuine touch of wild strawberries essence that gives an elegant fruit, always seeking to maintain all the organoleptic characteristics of the product in full balance with the same tint. This makes it a unique and innovative product on the market. We use the best corks to close the bottle.
Labeling — We use a new metallic paper for the label.
Tasting note — Pale pink, transparent, clean, with excellent detachment of fine bubbles forming wreath. In nose an aroma appears to wild strawberry in perfect balance with the typical tones of pastry cook’s shops, butter and dried fruits typical tones of yeast on a fruity background to banana, pineapple and mature Apple notes and walnuts, butter, ultimately an excellent combination of features that differentiate a sparkling breeding and high quality long with an innovative, elegant and surprising aroma to wild strawberry. Good step in the mouth, smooth, silky, long, sparks integrated with a light fresh touch, harmonious, elegant and personality.
Food affinities — Ideal is as an accompaniment to desserts, especially chocolate, which will enhance each other in a way really impressive. A duck confit is also a sensational partner, as well as both duck and goose in all its variations foei. In snacks, between hours and night is appropriate.
